Nestled in the cool, mountainous terrain of Comayagua, the Calan area benefits from steady rainfall, fertile volcanic soils, and high altitudes that make it ideal for specialty coffee cultivation. The region’s distinct microclimates and long harvest season allow cherries to mature slowly, concentrating sweetness and acidity. These growing conditions yield coffees that are smooth and balanced, with a classic Honduran cup profile known for its sweetness, round body, and clean finish.
This lot is produced by COHORSIL (Cooperativa de Horticultores Siguatepeque Limitada), one of Honduras’s most respected cooperatives. Founded in 1980, COHORSIL supports over 400 local farming families across the Comayagua Valley, providing access to agronomic training, quality control, and international markets. Beyond coffee, the cooperative invests in community development, promoting sustainable agriculture, environmental stewardship, and improved livelihoods for its members. Their integrated approach ensures consistency, traceability, and long-term producer well-being.
This coffee is graded SHG EP (Strictly High Grown, European Preparation).
SHG indicates it was grown above 1,200 meters, where cooler temperatures slow cherry maturation and produce dense, high-quality beans with enhanced sweetness and structure.
