Grown across the highlands of Chimaltenango and surrounding regions, this coffee comes from a mix of Acatenango, San Martín Jilotepeque, San José Poaquil, and Atitlán. These areas feature volcanic soils, mountainous terrain, and elevations ranging from roughly 1,300 to 2,200 MASL, creating ideal conditions for high-quality arabica production. Moderate temperatures, consistent rainfall, and dense shade canopy allow for slow cherry maturation, contributing to balanced structure and clarity in the cup. Coffee production in this region is deeply rooted in local culture and remains a key source of livelihood for farming communities.
This lot is produced by smallholder farmers within ASPROGUATE, an association founded in 2014 to support sustainable coffee production and improve market access for producers. What started with around 100 farmers has grown into a large network across multiple communities. The organization focuses heavily on organic farming practices, education, and long-term producer support, including training in soil health, fertilizer production, and environmental conservation. ASPROGUATE also emphasizes social initiatives such as gender equality, community development, and fair pricing, ensuring producers receive consistent support both economically and environmentally.
This coffee is classified as SHB (Strictly Hard Bean), meaning it is grown at high elevations where cooler temperatures slow cherry development and increase density, resulting in improved cup quality. The EP (European Preparation) designation indicates that the coffee has been carefully sorted for screen size and defects, ensuring a clean and consistent green product.
