Description

This decaffeinated lot comes from Colombia, one of the most celebrated coffee origins in the world and a benchmark for quality and consistency. Colombia’s unique geography—defined by its three Andean mountain ranges, rich volcanic soil, and year-round rainfall—creates ideal conditions for producing coffees with bright acidity, balanced sweetness, and layered complexity. Farms are typically located between 1,200 and 1,900 meters above sea level, where cooler climates slow cherry maturation, allowing flavors to develop more deeply.

Colombia is also known for its expertise in Methylene Chloride (MC) decaffeination, which preserves much of the origin’s natural sweetness and clarity. The MC process, also known as the European Process, begins by steaming green coffee beans to open their pores before rinsing them with methylene chloride, a solvent that selectively binds to caffeine molecules. The caffeine and solvent are then fully removed through evaporation and a final steaming, leaving no chemical residue. This process removes over 99.9% of caffeine while maintaining the coffee’s aroma, body, and characteristic cup profile.

This lot is graded Excelso EP (European Preparation). In Colombian grading, Excelso refers to bean size—typically screen 15/16—slightly smaller than Supremo (17/18) but still dense and high quality. The EP designation indicates that the beans have been meticulously hand-sorted and cleaned to remove defects, ensuring uniformity and consistency in roasting. The result is a coffee that maintains Colombia’s signature balance of sweetness, acidity, and depth, even in decaffeinated form.
